The Left-Over Dilemma

I recently made a vow to start cooking much smaller meals, in order to reduce not only over-eating [we felt guilty not finishing large portions], but to reduce the amount of waste. [We never eat left-overs, they just get thrown out.]

Now, I grew up in a biggish family, so I've still got this mental mindset of cooking for 5 people. It's been really hard to break out of this rut, because no matter what I make, it always looks much too small. Even if it's more then we could eat, I'm paranoid there won't be enough food, we'll still be hungry, etc.

Does anyone else have this problem? I'm wondering if I'm the only person on the planet who has a problem with left-overs. My fiance's grandmother refuses to have them, because she knows they never get eaten. My family either never had left-overs, or the ones we did have went rotten in the fridge. With just my fiance and I, I prefer to cook from scratch for every meal, so just eating them is something that usually never happens unless we're on different shifts and can't eat together.

What I'm looking for here is personal opinions on left-overs, as well as what you do with them or don't do with them. Maybe I'm the only person on the planet who cooks too much for too few people ;)
